Coconut Curry Mixed Vegetables

Lately I have been experimenting with Chinese seasonings. So far I have used 3 and prepared 4 dishes. I wanted to see if it taste the same as the meals served at the take-out. my favorite so far is the Fried Rice seasoning mix. They come in small packets and are sold in the International Markets.

Ingredients:

4-5 yellow Squash

3 small bundles of Bok Choi

1 medium Tomato

1/2 of a large Onion

5 Green onions

1stem of Celery

1 small piece of ginger

2-3 Seasoning Salt to taste

1 tablespoon of olive oil

2 sprinkles of Garlic pepper

3 sprinkles of Basil

Prep:

Cut all vegetables into small pieces

Cut tomato,ginger,green onions, onions and

place in a bowl.

Cooking Tutorial

Cooking:

Preheat 1 tbsp of oil in a pot

Add onions,tomato,ginger and celery

Stir

Cook on medium heat for 15 mn

Add peppers and stir

Add vegetables and stir

Add dry seasonings and stir

Add Coconut curry seasoning

Stir and cook covered for 25 min or until a

thick curry sauce is formed and most of the

liquid has evaporated.

Stir occasionally

Served with yellow rice and fish curry
