Rice And Peas Recipe

This dish is a very famous Caribbean dish. It is served as a side dish. This "Rice& Peas" recipe can be added to meats, chicken or fish recipes as a side dish. I added some of my homemade jerk chicken to my rice.


Ingredients I used for this recipe:

2 Cups of long grain rice

1 can of coconut milk

4 Tsps of Green seasoning

2 Teaspoons of butter

Seasoned salt to taste

Garlic salt to taste

Onion salt to taste

1/2 Cup of red kidney beans

1 1/2 Cup of Water

Prep:

Precook 1/2 of a cup of red kidney beans

Cook the beans midway, not too hard

or too soft

Wash the rice until the water is clear

Add washed rice to a large pot 

Add the green seasoning

Add the precooked beans 

Shake the can of coconut milk

Add the coconut milk to the pot

Add 1 1/2 cup of water

Lightly sprinkle some onion powder

Do the same with the garlic salt

Add seasoning salt to taste

Cover and cook for 15 minutes

on medium heat

Then reduce heat to low

Simmer the rice for 5mn or until the liquid has

dried out of the rice 

Use a spatula to fluff the rice and peas

Serve hot with a side dish or

meat of your choice.

I ate my "Rice and Peas" with some

"Homemade Baked Jerk Chicken".
