The chosen veggie for this week is tomato. Tomatoes are known to be a great source for vitamins A, B6, C, E, folate and phosphorus. There are many more nutrients in this vegetable. It comes in different shapes, sizes and colors. On the days that I feel for a salad I use the cherry tomatoes which are round and small. There also are many ways to eat this vegetable. It can be eaten raw, cooked or even grilled.

I most often eat my tomatoes raw or cooked. The tomatoes that I use in my kitchen are red but the shape varies per menu of the day. I often use cherrie, large round and oval red tomatoes.

On the days that I feel for a salad I use raw cherry tomatoes which are round and small. They are also known as grape tomatoes.

On a stew day, I use either a large round or oblong diced tomato. It thickens the stew and gives it a nice consistency. It also goes well with the chunks of beef in the stew.

In my household, we love to eat “Tostitos” chips with chuncky salsa. We love homemade salsa. I use the oblong shape raw tomato diced Sometimes I use my ninja food processor to make a different blend of salsa.

My daughter enjoys tomato soup with grill cheese during the cold season. I use the large red tomatoes which I blend in a regular blender.

I enjoy tomato juice, but I do not make it at home. My favorite tomato juice is V8 and I recently started trying out other V8 juice blends.
