How to Make a Grilled Chicken Quesadillas: Panini Recipe

Flour tortillas are my favorite because of the variety of  recipes I can prepare. I can use it for breakfast, lunch or dinner.The recipes are boundless for all diets. The recipe that I choose to prepare today is suitable for most diets. I turned on my"Chef Thinking Cap" and came up with the following delicious recipe , which I will be serving it for brunch.


You will need the following ingredients:

1 -1 1/2 cup of grilled chicken breast cubes
1/2 cup of fresh finely chopped spinach
Grated cheese of choice
1/3 Piece of finely chopped red bell pepper
1/3 Piece of finely  chopped green bell pepper
1 can of mixed corn with bell peppers
Cooking spray of your choice
Garlic Salt
Seasoning salt
Green seasoning

Prep:
Cut one chicken breast into small cubes
Presoak them in a bowl of water and  vinegar for a few minutes or until it is defrosted
Rinse under cool water
Add all dry seasoning and salt to taste
Use a spatula or your clean hands to massage the seasonings into the chicken
This will allow the pieces of chicken to absorb all those flavors.
Brings the can of mixed corn to a boil on low to medium heat.
 Preheat 1 1/2 teaspoon of olive or vegetable oil on high  in a stove top skillet
P.s** you can use a frying pan as a substitute if you do not have a stove top skillet.**
Place the pieces of chicken in the skillet
Turn down the heat to medium
Remove the corn from the heat once it starts to simmer and juices are slightly evaporated or reduced.
Flip the chicken pieces repeatedly to prevent them from burning or sticking to pan
Grill the chicken until they are fully cooked and brown with visible grill markings.
Place them in a bowl

Cooking the Grill Chicken Quesadilla
Preheat the Panini electric Grill on high
Place a flour tortilla in a place
Add a small amount of grill chicken to one side of the tortilla
Cover with chopped spinach
Add 1-1/2 tbsp of mixed corn 
Sprinkle some grated cheese
Lightly Spray a small amount of cooking oil spray
Onto both plates of the grill
This will prevent the quesadillas from sticking to the grill
Fold the tortilla in half to cover the ingredients
Place it on one side of the grill
Then close the grill by bringing down the level 
Apply pressure to  the handle to seal the Quesadilla
Allow it to cook until both sides of the tortilla 
have a slight brown tint to it  and grill markings.
Repeat the same step with the other tortillas

Panini Maker Recipe with Grilled Chicken Breast Strips

This Grilled Chicken Breast on a Panini Maker recipe is very easy, quick and healthy. This recipe is very simple  to follow. I am going to show you how I use my Panini maker to make delicious and healthy recipes.



You will need the following ingredients:

1 pack of skinless chicken breast strips
1/3 cup of White vinegar
3 tsps of Green seasoning
2-3 pinches of Garlic salt
Seasoning salt to taste
1 pack of Goya seasoning ( orange pack)
Cooking spray

Prep

Remove the strips from the package and place them in a bowl
Add or cover with some vinegar and 1 1/2-2 cups of cool water
The acid from the vinegar will reduce the bacteria in the chicken
Allow the strips to soak for 20 minutes

Rinse under cool running water
Add 3 teaspoons of green seasoning
3 Sprinkles/ dash of garlic salt
2 sprinkles of seasoning salt
1 pack of Goya
2 pinch of Scallion seasoning mix (optional)
Massage the seasonings into the chicken with your clean hands so that it can retain all the flavors
Let it sit for about 30 seconds

In the mean time, preheat your panini maker on high
Open the panini plates in a flat or supine position
Lightly spray both plates with cooking spray

Cooking
Reduce temp to medium 
Place chicken strips on both plates or place them on one grilling plate and bring the top down

Add a small amount of warm water to the remaining seasoning in the bowl
This will be used later to prevent strips from drying
Flip over each strip once one side is brown with grilled marks
Use a brush to moisten the side facing up and keep repeating the same steps until they are cooked

**If you use one plate, there is no need to flip the strips,since both sides will cook at the same time
Check to make sure that each strip is fully cooked
**One way to check is by using the tip of a knife
and placing a slit in the chicken
The color should not be pink, white is OK with clear juices
Remove from the the panini maker
And let the chicken strips to cool down before serving!

**P.S Don't forget to turn off your panini maker

The chicken strips can be used in a salad 
They can also be served with your favorite side dish  and vegetables.

Deep Crispy Fried Shrimps Recipe

I love seafood especially shrimps, whether they are deep fried or steamed.Whenever I go to a seafood restaurant like Captain D's, I usually order fried shrimps. Unfortunately,  they do not make them  like they use to. Recently the one in my town's food is very greasy . So I decided to try and make my own shrimps at home. While I was walking through the international isle at my local grocery store, I was drawn to an item in the Asian isle.  I found this bread crumbs coating to make fried shrimps. You guys know that I had to try this product. The fried shrimps on the box look so delicious. I picked up the ingredients to prepare this delicious shrimp appetizer. I put my own twist into the recipe and came up with these delicious shrimps.


You will need the following ingredients:
1 cup of unpeeled shrimps or frozen cooked shrimps.
Garlic salt
Seasoning salt
1/2 cup of flour
2 cups of vegetable oil
Black pepper
Lemon juice
1 teaspoon of Green seasoning
1 beaten egg
1 cup of Chinese bread crumbs
1/2 cup of flour

Shrimp Prep
Place shrimps in a bowl
Pour 1/3 cup of lemon juice over the shrimps
Soak for 10 seconds
Rinse under cool water
Add 1/3 tsp of seasoning salt to your taste
Sprinkle some garlic salt
1-2 tsps of green seasoning
1 pinch of black pepper
Mix in the seasoning and spices into the shrimps
Set aside
Preheat 1-2 cups of vegetable oil in a skillet
Beat 1 large egg in a separate bowl
Add flour and bread crumbs into a bowl or a Ziploc  bag

Cooking
First coat shrimps one at a time in beaten egg
then coat them with breadcrumbs mix
Place all the coated shrimps on a plate
Add each shrimp to preheated oil 
Once shrimps get golden brown, remove from heat
Place on 2 paper towels to drain the excess oil.

This dish can be served as a cocktail for parties, dinner or movie night.
Serve with your favorite deep and condiments!

Makinge Spicy Wings with Sriracha : recipe

In today's recipe, I'll show you how to make homemade "Spicy Wings". This recipe is not suitable for children and those of you that can't tolerate spicy, hot foods. For the brave ones, let's move with **caution**. This recipe is one of my favorites. It is simple and very easy to prepare.
You can use it for parties, cocktails, football games or wing night with friends.



Ingredients:
20 Thawed party wings
1/3 cup of Vinegar
Seasoning salt
1/3 tsp of Garlic salt
Poultry seasoning
1 pack of sazon
Vegetable oil
1/2 cup of flour
1/2 cup of wing bread crumbs

Spicy sauce #1
Spiracha  hot sauce
Pure Honey 

Spicy sauce #2                    
Honey Barbecue Sauce
2 tsp  of Wet Jamaican jerk seasoning

Prep:
Defrost wings in a bowl of water with 1/3 cup of vinegar
Once defrosted, rinse under cool water
Marinade:
Sprinkle seasoning salt to taste
Sprinkle 1 tsp of garlic salt
Cover wings with poultry seasoning
And scallion seasoning (optional)
Add 1 pack of Goya sazon

Use clean hands or spatula to blend in the seasoning throughout the wings
Then set aside
Wing coating:
Add 1/2 cup of flour and 1/2 cup of wing bread crumbs into a large ziplock bag
Seal and mix by shaking the bag
*Tip: For much spicier wings ,only add the Texas wing bread crumbs
Cooking:
Preheat on high 1/2 of a pot of vegetable oil
for deep frying
**You can also use your electric fryer if you have one
Add wings one at a time to the pot and cover
Once wings start getting slightly golden brown, use the tip of a knife to puncture the wings
This will allow the wings to be fully cooked
Cover and allow them  to cook for an additional 10 minutes until they are all golden brown
Remove from heat and place on a paper towel to drain the excess oil
Sauce#1:
Cover the entire bottom of a bowl with pure honey 
Add some heat to it by topping it with Spiracha hot sauce 
Mix, cover and set aside
Sauce #2
In a separate bowl, add honey barbecue sauce to cover the bottom of the bowl
Spice it up with 2 tsps of wet Jerk seasoning
Mix together, cover and set aside
**P.s: You might tea up while mixing this sauce
Firing up the wings:
Split the wings in half which should give you 2 sets of 10 wings 
Add the first 1/2 in sauce #1 cover and shake to coat and spread the sauce evenly throughout the wings
Add the second 1/2 of the wings to sauce #2 
Cover and shake to coat and spread the sauce evenly throughout the wings.
Serve on a platter with your favorite condiments and cool drinks!

Lemon Pepper Grilled Salmon with Rosemary Recipe

This recipe is for Seafood lovers. It is simple and very easy to cook. It is also a healthy dish that you can add to any side dish or salad.Perfect for grilling season in the summer.Salmon is one of my favorite fish!


For this recipe you will need:
Ingredients
1/2 cup of Lemon juice
Lemon pepper seasoning
Dry rosemary seasoning
2  tsp of Green seasoning
Garlic salt (to taste)
A few sprinkles of Seasoning salt
Lemon pepper and garlic marinade
2 pieces of fresh salmon

Prep:
Place your salmon into a bowl
Pour lemon juice over the 2 pieces of salmon
(you can also use a fresh lemon)
Let it sit for a few minutes
Rinse off with cool water
Sprinkle lemon pepper seasoning to your taste
then 1/3tsp of garlic salt
3-4 pinches of seasoning salt
Some rosemary herbs to cover each piece
1 tsp of  green seasoning on each piece of salmon
Use your fingers to rub in the seasonings and herb into the salmon
Make sure to rub the seasonings on both sides
Pour lemon pepper and garlic marinade to cover both pieces
Use your fingers to work it into the pieces of salmon and allow it to sit for a few minutes so that the seasonings and rosemary flavors can soak into the salmon pieces.

Cooking
Preheat 1 tbsp of olive oil in your stove top grill pan
Place both pieces of salmon face up onto the grill

Allow the salmon to cook until it is brown
Then carefully flip the pieces over 
Use a spatula to press down on the pieces to make sure each piece is fully cooked
Once it turns brown flip each piece on the thin side on the left
Repeat the above step for the the other thin side  on the right
P.S you can use the remaining marinade in your bowl. You can pour over the salmon if it starts to stick or get slightly dry. You want your salmon to be moist.

Allow it to cook until it is brown.
You can serve your salmon with white rice, a salad or any dish of your choice.

Caribbean Dumplings Recipe for Soups

I recently shared my favorite "Split Peas Soup" recipe in my previous blog. Here is the recipe as promised for the dumplings that I added to the soup. It is a very easy recipe and only requires 3 ingredients.
Ingredients:
2 cups of flour
1 -1 1/2 cup of luke warm water
2 tablespoons of sugar
1 pinch of salt
Prep:
Add the dry ingredients into a bowl
Mix
Slowly add water while mixing
Until it forms a large dough

Making the Dumplings
On a dry surface, sprinkle some flour
Remove dough from bowl
Place it on the floured surface
Knead the dough into a smooth ball
Pull apart 2 inch pieces and roll into the palm of your hands to form small balls
Place them on a plate
Repeat this step until all the dough has been used.

When to add the dumplings to the soup?
When the vegetables and meat are fully cooked in the soup, add the dumplings one by one
Cook on low fire for an additional 10-15 minutes or until the dumplings are fully cooked
The dumplings will pick up the flavor of the soup.

Don't get any ideas of stirring it into your martini.In this recipe, I will show you how I used one of my energy sticks in my favorite fruit infusion. I love the healthy benefits such as the vitamins. Don't worry the taste is neutral so you would not taste it in your drink.

Fresh drink before infusion!

You will need:
1 McIntosh apple
1 Mango
Purified water or bottle water
A tumbler of your choice

Overnight Prep:
Cut apple in cubes and freeze 
Peel mango, cut into small pieces and freeze
1 PureLYFT Energy Stir stick

Making the infusion:
Remove all the cut up fruits from the refrigerator
Place the frozen apples at the bottom of the tumbler
Add the pieces of mango
Pour water to fill up your tumbler
Pill back the sticker on the stick over the drink
Stir in the PureLYFT Energy Stir Stick for 15 seconds
Cover and infuse in the refrigerator for a couple of hours.
Enjoy your healthy refreshing drink!

How to Cook Split Peas Soup iwith dumplins


As the holidays are approaching, so is the cold weather . It is time to bring out our favorite soup recipes. I wanted to share my delicious "Split Peas soup" cooked in a Presto Pressure Cooker. It is one of my favorite dishes  to stay warm during the cold winter months.

You will need the following ingredients:
1 pack of boneless chicken thighs
1 Pack of frozen gumbo mixed vegetables
1/2 Pack of split peas
1 pack of Grace Jamaican dry chicken soup mix
2 Small cans of chicken broth
1 large Celery branch finely chopped
1 hand full of parsley finely chopped
4 Large green onions chopped
1 medium onion chopped
1 large red hot pepper
2 tbsp of green seasoning
1 pack of sazon


Overnight Prep:
Vegetables
In a separate bowl add
1/2 of a green bell pepper chopped
1/2 of an onion finely chopped
3 scallions finely chopped


Cut chicken thigh into medium cubes
Soak in a bowl of cool water with 1/3 cup of vinegar for 5-10 minutes
Remove from the vinegar solution and rinse in cool water
Place the chicken into a bowl and add the following:

1 Sprinkle of seasoning salt
2 tbsp of green seasoning

3 dashes of garlic powder
2 dashes of scallion seasoning (optional)
1 Pack of sazon (the orange packet)
Add 1/2 of the bowl of chopped vegetables
Massage all the seasonings and chopped vegetables into the chicken thighs

Cover the bowl and chill overnight to induce the flavors


Place Split Peas in a large deep bowl
Cover with warm water
Allow it to sit overnight *(it helps the peas to slightly soften for faster cooking)*

Cooking
Preheat 1 tablespoon of vegetable oil in a pressure cooker
Add remaining chopped vegetables
Cook while stirring occasionally until translucent
Add preseason chicken and stir
Cook until it turns slightly brown
Or the seasoned remaining liquid dries out
Drain the split peas and rinse under cool water
Add the peas to the pot 
Add the Jamaican soup mix
Add the frozen vegetable soup mix
Add the remaining chopped seasoning
Add the 2 cans of chicken broth
Add water up to the marked water level in the pressure cooker 
Add whole red hot pepper
Cover and pressure cook for 35minutes
Remove from heat
Place pressure cooker under running cold water
Remove regulator slowly 
Then open the pressure cooker slowly
Remove the hot red pepper to prevent the soup from being spicy
Mix the soup with a spatula
Add a cup of water depending on how thick
You would like your soup
Simmer on low heat for an additional 10 minutes
slightly covered *(do not pressure cook)*
Serve hot with crackers or rolls!
Stay warm this winter!⛄❄❄

As Seen on TV Baked Tortillas Bowls for Parties



I purchased this Tortilla Party Bowl Pan Set from a "As Seen on TV" store at a mall. My first thought was that this set will come in handy for parties, picnics, movie night or Taco nights. My set came with two jumbo pans and a bonus recipe book.
I tried the mango salsa recipe from the cookbook which came out perfect. My second time I used it to make chipotle bowls and everyone loved it. The last time I used it as a chicken salad bowl.There are endless recipes for these bowls. 
The baking time is very quick and not time consuming and best of all you can use your toaster oven. There is no kneading or mixing to make these bowls, therefore no mess to clean up .All you need is one ingredient to make these tortilla bowls .

Ingredients needed:


2 Soft flour medium tortilla wraps or

Spinach wraps
2 ungreased tortilla pans

Cooking:

Preheat toaster oven or regular oven at 350 degrees

Place 1 tortilla in each pan
Use your hand to insert the tortillas into the ungreased pans
Make sure you fill the spaces in the baking pans
Place the pans into the preheated oven
Bake for 5 minutes
Shell should be crispy so that it can hold
whatever meal or dip you chose to serve in it
Remove it from the pan and let it cool
Add your favorite dish or dip and serve!

How to Steam Vegetables



Many people use electric steamers to steam their vegetables.For people on a budget, It would be very costly and definitely unable to purchase.I use  a stainless steal steamer basket to steam my vegetables. This gadget is very affordable at $10. I love this kitchen gadget because it is durable and rust free, It is very easy to store due to the size.It looks like a sunflower when the stainless steel leave opens. It also has tiny holes to absorb the steam from the water with a loop in the middle to remove it from the pot. I love to steam my fresh carrots,string beans and many other vegetables.. It has a lot of healthy benefits which includes preserving the nutrients and natural flavors in the vegetables. You can also use it to steam seafoods, I haven't used it for my seafood, Whenever I decide to do
so, I will be happy to share my experience.It is very simple and easy to use ths gadget.

 First I chose the vegetables that I would like to steam.
I chose 1 cup of fresh baby carrots
I preheat 1/2 cup of water and bring it to a boil
Carrots are washed and placed in the center of the basket
The basket is closed and placed in the pot of of boiling water



Once the water evaporates
the other 1/2 cup of water is added to the pot
Continue steaming the vegetables in covered pot until soft
You will notice that the vegetables are tender ad moist
You can check by sticking a knife into the vegetables
You should be able to smoothly cut the vegetable with no resistance.
Serve hot!


My thoughts on the "Stainless Steel Steamer Basket are:
 it is a great asset  to your diet and health
 and a great kitchen accessory.
Lastly, it is budget friendly!

How to Make Deep Fried Sweet Potato Fries



I wanted to share this Deep Fried Sweet Potato Fries recipe. This is one of my favorite go to side dishes. This recipe is for those of you who do not have an electric deep fryer. Remember that Clos Kitchen moto is to make affordable meals with affordable appliances for people on a budget. This vegetable has so many benefits, nutrients, and vitamins. I love sweet potatoes but, I do not like to eat it when it is wet or boiled. Now don't get me wrong, I do enjoy a good sweet potato pie. Besides that I really enjoy eating it crispy as fries. What I love about this recipe is that it is very simple and only requires two ingredients. To make it a bit more healthy, you can use olive oil in substitution of the Vegetable oil or oil of your choice. For my recipe, I chose to use some vegetable oil. Feel free to add in any topping of your choice as well that you would naturally eat with regular french fries.


Ingredients:
2 Large Sweet Potatoes
Oil

Prep:
Peel and wash 2 sweet potatoes under cool water
Place them in a bowl of cool water to prevent the color from fading or darkening

Preheat oil in large deep skillet
Add oil enough to deep fry and fully cover the fries
Cut each potato in half vertically
Cut each half in long rectangle pieces 
Place them back into the bowl of water


Cooking
Check to see if the oil is ready by adding a pinch of flour. 
If it bubbles then it is ready
Line a plate or dish with paper towels to drain the excess oil
Dry the uncooked fries by using a paper towel
Place all the dried pieces of sweet potato in the preheated oil

P.S They can all cook at the same time and save you some time.
Don't judge me for my pot! You guys can see by the looks of it, that I've made a ton of curry chicken and a whole lot more cooking.
Cover for faster cooking
Occasionally use a metal spatula to move the fries around

Once they are brown
Remove them from the oil and place them in the lined dish

Quick and Simple Salsa Recipe

I found this new salsa seasoning pack at my local grocery store.This recipe only requires 3 ingredients which are vegetables. All the other ingredients are enclosed in this small package in the form of a powder.This recipe takes less than a minute for the whole process. This recipe is perfect for a college student, a bachelor or someone on the go.It can be served for any occasion such as a snack, for parties or picnics.



Ingredients needed:
1/2 of a pack of salsa seasoning mix
1 tomato diced
1/4 piece of red onion diced

Prep
Add diced tomato and onion in a bowl
Add salsa seasoning mix powder
Mix all ingredients together until seasoning mix is dissolved
Chill in refrigerator until you are ready to serve!
